Hard Cheeses

Cheddar
Both our red and white cheddars are available in a range of flavour profiles with a typical firm body and uniform close texture. Cheddar is a universal cheese ingredient, which can be used in almost any application to add flavour and functionality. Vegetarian and animal rennet varieties are also available.
Emmental
This distinctive Swiss type cheese has a firm body and a fine texture with typical eye formation. The sweet nutty flavour and fragrant aroma enhance its culinary appeal. Emmental is suitable for a wide variety of food ingredient applications.
Gouda
Our Gouda is typical of this cheese variety. It has a semi-hard consistency and a smooth texture, with limited eye development and a well-rounded flavour.
Mozzarella

Soft Cheeses

Cloneen
Another cheese of the hard Italian variety. It is a slower ripening cheese, with a lower moisture content and a strong piquant flavour. It is traditionally grated and added to a recipe for its strong Italian flavour.
Cottage cheese
Cottage cheese available full fat in natural flavour, with pineapple or with chives.
Mascarpone
Cream cheese available full fat in light natural flavour, with garlic and pepper, with herbs and spices, with orange or with pineapple.
Monterey jack
This is a washed curd cheese. It has a texture close to that of Cheddar except that it has a higher moisture content. It is ideal for use as a food ingredient in a wide variety of applications.
Reduced fat cheese
We have developed reduced fat cheeses, which respond to changes in diets and attitudes without compromising on flavour. 22% fat and 14% fat products are available which are similar in body, texture and flavour profiles to Cheddar cheese.
Regato
This hard Italian type cheese has a fresh piquant flavour. It is regularly used as a Parmesan replacement. It can be used to add a touch of "spice" to any food ingredient application. Its hard body makes it suitable for grating and for use as a topping.
